Sour Cherry Energy Bites

Ingredients
- 1 Cup Rolled Oats (90g)
- 2 Tbsp Chia Seeds (30g)
- 2 Tbsp Desiccated Coconut (30g)
- 3 Tbsp Dried Sour Cherries (60g)
- 4 Tbsp Unsweetened Peanut Butter (125g)
- 5 Tsp Honey (100g)
- 1 Tsp Vanilla Extract
- 4 Squares Dark Chocolate (80%) (40g)
Instructions
- Combine all ingredients thoroughly in a deep bowl.
- Refrigerate the mixture for about 1 hour to set.
- Shape the chilled mixture into bite-sized balls.
- Melt the dark chocolate using a double boiler, dip each energy ball into the melted chocolate, and arrange them on a flat plate. Refrigerate until the chocolate coating hardens.
- Makes 20 servings.
