Ingredients
- Lean Ground Beef (250g)
- 4 Eggs (200g)
- 4 Whole Wheat Tortillas (280g)
- 1 Cup Mozzarella Cheese (100g)
- 1 Avocado (140g)
- 2 Medium Tomatoes (220g)
- 1 Clove Minced Garlic (3g) (optional)
- 1/4 Cup Chopped Parsley (15g)
- Juice of 1 Lime (45g)
- 1 Tsp Paprika (3g)
- 1 Tsp Salt (2g)
- 1 Tsp Olive Oil (5g)
Instructions
- For the avocado salad, combine the diced avocado, tomato, parsley, garlic, and lime juice in a deep bowl and mix well.
- In a separate bowl, whisk the eggs with paprika and salt.
- Heat and lightly grease a large pan.
- First, cook the ground beef for 4–5 minutes and set aside. Next, cook the eggs.
- Lay out the tortillas, fill them with the eggs, ground beef, and avocado salad, and roll them up tightly.
- Toast the wrapped burritos in the pan for another 2–3 minutes before serving.
- Serves 4.
